Try to make all Veggies finely chopped so you will get good taste.
Ingredients
- 1 Cup Rice ( I used AmbeMohar )
- 1/4 Cup Finely chopped Onion
- 1/4 Cup Mix veggies I have used frozen you can use fresh too ( Corn,Carrots,Green beans )
- 1/4 Chopped Cabbage
- 1/4 Finally chopped Tomatoes
- 1 Tsp Ginger and Garlic Paste
- 2 Tbsp Oil
- 1 Tsp Salt ( as per taste )
- 2 Tsp Red Chili powder
- 1 Tsp Garam Masala Powder
- 1 Tsp Goda Masala
- 1 Tsp Turmeric Powder
- 1 Tsp Coriander Powder
- 1 Tsp Roasted Cumin Powder ( you can roast Cumin a little on Pan and grind it )
- 1 Tsp Sugar ( Optional )
Preparations :
- Wash rice and soak in water for 10-15 min
- While rice is getting soaked cut all veggies and Spices ready
Process
- In pot add Oil on Medium heat
- Add Ginger Garlic paste and stir until raw smell gone
- add Onion cook until Translucent
- Add All Veggies and cook for 30 Sec
- Add all Spices together ( chili,Turmeric, Masalas,Salt,Sugar,Coriander and Cumin powder)
- Mix well
- Drain water from Rice and add into pot
- Mix well
- Cook for close to 1 min without water
- Add water ( I used 1 and half cup of Water )
- Stir and cook for 10 min on High flame
- then once little water left in Rice low the flame and Cook with lid for another 7-8 min
13. Keep eye make sure rice is not sticking at bottom of pot
14. Once cooked Serve with Riata

Tips : Using Sugar in this recipe will add more Flavor and color :)
Do not stir More so it will give good cooked long rice grains
