Brinjal Curry with Jowar Roti ,Rice and Thecha |
Brinjal (Eggplant ) Curry |
Ingredients:
5-6 Brinjals ( eggplants )
1/4 cup Roasted Peanuts
1/4 Chopped Onions
1/4 cup tomatoes puree
3 tbsp oil
1 tsp Red chili Powder
1 tsp Garam Masala
1 tsp Coriender seeds powder
1 tsp Goda Masala
1 tsp Turmeric powder
1 tsp Salt or as per taste
2 Garlic cloves and 1 tsp Ginger paste
curry leaves 2-3
Preparations :
In a mixer add red chili powder, garam masala, coriander seeds powder, Goda masala, garlic, curry leaves and make it coarse powder and take it in a bowl
Fill Mixture into cut brinjals and keep Extra mixture for gravy
Heat a pan and add 1 tbsp oil and add onions and cook till brown and keep it aside
Process:
In a Pan add 2 tbsp oil and once heated add Cumin seeds and Ginger paste
Add Filled Brinjal into oil and cook for 2 min
Add Turmeric powder and if you want to make extra spicy can add 1 tsp chili powder ( optional)
Add Cooked onions and leftover Mixture to pan and mix well
Add 1/2 Cup water and cook it for another 5-7 untill Brinjals are tender with Lid closed
For Garnish add Chopped Coriander leaves on top before serving :)
